Broccoli Apple Salad with Yogurt Dressing

Makes 4 servings 

Ingredients:

Salad:

  • 4 cups broccoli florets, diced
  • 2 small gala apples, diced
  • .cup golden raisins
  • .cup chopped red onion
  • .cup sunflower seeds
  • 4 slices turkey bacon

Yogurt Dressing:

  • .cup plain Greek yogurt
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon lemon zest

 

Instructions:

  1. Combine broccoli, apples, raisins and onion in a medium bowl.

  2. Measure seeds and set aside.

  3. Microwave bacon on a plate between two paper towels for 2-4 minutes, until crisp, checking often to avoid over cooking. Break into small pieces and set aside.

  4. In a mason jar, combine dressing ingredients.  Replace lid and shake.

  5. Pour dressing over all ingredients except seeds and bacon and blend well.

  6. Just before serving, garnish with seeds and bacon.
