Grape, Pecan and Arugula Salad with Balsamic Vinaigrette

Makes 6 servings

Ingredients:

Salad:

  • 6 cups fresh arugula
  • 2 cups seedless grapes, halved
  • ½ cup crumbled feta cheese
  • ½ cup toasted pecans
  • ½ red onion, sliced

Vinaigrette:

  • ⅓ cup extra virgin olive oil
  • 3 tablespoons maple balsamic vinegar
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper

 

Instructions:

  1. Combine salad ingredients in a large bowl.
  2. Combine vinaigrette ingredients in a small bowl; whisk to combine.
  3. Drizzle vinaigrette over salad, and toss to coat. Serve immediately.
