Makes 6 servings
Ingredients:
Salad:
- 6 cups fresh arugula
- 2 cups seedless grapes, halved
- ½ cup crumbled feta cheese
- ½ cup toasted pecans
- ½ red onion, sliced
Vinaigrette:
- ⅓ cup extra virgin olive oil
- 3 tablespoons maple balsamic vinegar
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions:
- Combine salad ingredients in a large bowl.
- Combine vinaigrette ingredients in a small bowl; whisk to combine.
- Drizzle vinaigrette over salad, and toss to coat. Serve immediately.
